Fromagerie au fond des bois
AT FREDERICTON BOYCE MARKET SINCE 2011
Bring the kids, you need to try these goat cheeses!
After working for several years organizing events for the King of Belgium, Laurent Didier decided it was time to try something vastly different. In 2012, his longtime dream of living on a farm led him to move from his hometown in Belgium to Rexton, where he purchased a 265-acre farm. He taught himself how to make goat cheese and began selling at the market. Aside from the 200 goats, he has seven horses, chickens and cows that keep his hands full!
All of his artisanal goat cheeses are made with the milk from his own goats. They come in many flavours, from pepper, and cranberry, to cumin, and seaweed. Aside from goat cheese, he has increasingly been adding cow’s milk cheeses so you’re sure to find something you love!
